As the Food and Beverage Consultant at Fox Browne Creative, I develop innovative food concepts and menus and train kitchen teams to create delicious food, cooked with love and delivered graciously in the remotest parts of Africa. My role also involves collaborating with the design and hospitality teams to create functional kitchens and source sustainable, noteworthy, and appropriate food service equipment that enhances the guest experience.
Over the past 11 years, I have partnered with Fox Browne Creative on projects across South Africa, Zimbabwe, Zambia, Botswana, Mozambique, and Namibia. From simple tented campfire cuisine to award-winning lodge menus driven by design, my passion lies in crafting simple, delicious food inspired by global flavours that resonate with local palates. Teaching teams to deliver "delicious and delightful food" is my ultimate objective. Inspired by the people and wild places of Africa, I am committed to designing menus that reflect a sense of place, sustainability, and African identity.
My career began in the NGO sector, focusing on peace mediation and conflict resolution after earning an MSc in International Security from Bristol. However, my deep-rooted passion for Africa and food drew me to collaborate with various camps, lodges, and boutique hotels, where I thrive on delivering “deliciousness in wild places”. As a self-taught cook, my ongoing food education grounds my impact on teams through relevant and sustainable food practices.
